Try over and over again or play with teammates
Apparently that makes him casual.
You may also want to choose one of the far pillars for him to focus his melee on, there's two lines that zero in on you, then run behind pillar when he vomits.
Or you can set it to Very Easy and faceroll him too, its not like he drops any loot worthwhile.
I acutally like the boss/mimiboss difficulty in this game, they are a challenge and require tactics to beat.
As for the boss fight:
Learn to read his attack patterns in advance. Makes it a lot easier knowing when to dodge and hide.
Avoid his slam attack (yellow line) by dodging moving away fast.
For the poison breath, you have to hide behind one of the pillars quick. But make sure, you have at least 1 or 2 pillars left to hide behind, because his slam attack damages/destroys the pillars, so lure those away from them. I personally let him destroy the middle pillar, to make room for dodging later on.
The poison rain attacks (green circles) are easy to avoid, just move out of the way.
The fight will just get more hectic and difficult later on, as many attacks from the boss start to overlap and also more mobs spawn. Always try to keep the boss in sight, to see what attack is coming up next. The poison breath is surely the most damaging attack, so hide quickly.
Just keep trying, eventually you will beat him, i'm sure!
Yet for the scout, only solution was to do it on very easy. The boss seems poison immune by the way.
I have the fireball skill which does a lot of dmg if you spacebar it the whole time on the boss plus hitting him with your standard firebolts rank 2. That's what helped me a lot. And also learning his casts and how to move...
Also, make sure you save one of the covers at least so you can avoid the poison spit.
