Iron vs Iron Ore

Is there some way of turning iron ore into iron? Because I'm always short of iron for building but can't find anywhere that sells it, just ore, so I'm pretty much down to farming bandits for 1-2 pieces of iron every couple battles and it's really handicapping my progress.

Nope. Best way to farm iron is either capture Odestk or Lubni, those has Iron Factory. Besides that, you'll just have to make do of the iron mines. I already made a topic about this, can't buy iron in the stores, although in previous version you can, now you can only find it in some armies when you defeated them or some camps and iron mines.

That's a shame, if I'd known I'd have saved way more from before I had a town. Right now I can conquer towns waaay faster than I can build up the ones I have.

It really feels like the iron ore should just be regular iron, and I'm wondering if it's an oversight left over from a version change. Especially considering you're digging the "processed" iron directly out of the ground at mines. Really ought to be changed, hope the devs see this.
