Tbh, I haven't paid much attention to it so far, if in any case a woman with a cart can transport more goods than without, but in this case, there could be another reason for this:
When the (granary) workers go fetch goods, they will reserve the amount at the corresponding building (e.g. farm). They can only reserve what's available. During harvesting, it could be the case, that at this time, there was not more of it available, so she reserved what was there, then she made her way towards the building. Meanwhile another female granary worker also was looking for goods to transport and reserved another 50 sunflowers, that were now available.
You will notice, that at cowsheds, sheep farms and chicken coops, the granary workers sometimes will transport just little quantities of milk/eggs, because they could only reserve what was there at the time, while meanwhile the building produced more goods. As a result, the transport of these goods is not very efficient. On the other hand, I have no clue how one can improve this, so that they don't travel across the map for just a handful of eggs.
