But I do like the idea of making it easier to build on uneven land with having a digging crew.
I wouldn't mind more variety in house designs. Not necessarily like levelling up, but maybe more variety in appearances that change/adapt over time? Instead of just the Mazanka-style houses, what about some turluchni styles or grazhda farmhouses. Maybe introduce neighbouring styles like Izba (Russian-style log cabins. Don't come for me.) or timber houses? Or more decorative options like traditional Moldova peasant houses, or paintings/decorations like in the Polish village of Zalipie? I like that the market stalls have different designs on them.
Also what about villagers having the ability to alter them? Like adding small outbuildings, and pretty decorations to items/plots of land that have been in the game for a while? Have a creative textiles option for colourful cloth/rugs/curtains or embroidery? Import pelts for more luxury clothes? Jewellery/personal ornaments as a luxury?
I wouldn't mind seeing more wildlife like water birds, foxes, ect. Add other farm animals like ducks/geese, mules, goats. Alternate varieties of crops like Emmer wheat, millet, rye, oats, and different fruit and veggies like parsnips, radish, and mushrooms. Herbs would be good.
Possibly you could add a way for villagers to combine ingredients and show what meals they are making. Maybe even have preserve-making abilities added to the home.
