How is drifting done?

Like, I don't understand. Every map is full of these massive straightaways and moving obstacles. Tagging anything cancels your meager combo and the star requirements are skyhigh. Am I meant to just veer all over the road and hope I don't hit anything? I can't unlock a single racer with this nonsense!
