Whats the point of Egg quality?
So I've noticed something odd with creatures stats and levels and Im trying to understand how they all work.

I got a pure Hornet egg from the ruins, I don't remember it starting level but seeing as it was from ruins it should be in the 15-20ish level. I hatched this egg and it been leveled to around 33. with 33 Stam and 33 Speed it can fly to the top of a great tree and have about a quarter stamina left.

I went over to the Forbidden Monuments and farmed the black variant *Hornet over there. I farmed them until I got a pure egg, it was hatched at level 90. I respec it so it had 60 Stam and 60 speed. By the time it makes it to the top of the great tree it has a sliver of stam left, barely making it to the top.

Both eggs were pure.
One egg is drastically higher level then the other and has more stats.
But the lower level egg with less stats preforms better.

Is this a bug or am i missing something? I wanted a black variant hornet, but if its going to be this much weaker then my level 33 hornet, then I think Ill just stick to the classic orange one I have.

I'm still kinda new at the game, so I might be entirely wrong, but I'm pretty sure the egg quality determines the quality of the perks they can end up with vs. stats.
I did something similar to you, but instead of trying for an egg from the black variant of the hornet, I just trapped one. It was about level 90 and my original hornet was around level 37. At the time, my original one had slightly more health than the level 90 and definitely performed better when it came to flying. I'm sure if I keep leveling the original hornet, it would very quickly outpace the black hornet because it seems like its stat weights are just better due to starting out at a low level. I suppose that's an added benefit of raising them from a much lower level, but it's kind of a bummer when there's some cool colour variants out there that start at higher level when hatched.

I've been testing it some. I noticed after I got the black higher level hornet bond bar up, by petting it a lot, its stamina usage got better then my old hornet. However like you say, my old hornet who I got at a lower level has way better health.

All that said Im finding that the taming system in general still needs a lot of work. I tamed a random scorpion with basic stats and its out preforming any of my other bugs and is absolutely broken compared to everything else.

I was hoping it would be more like Ark where if you take the time to get good stats and levels, the weaker early tames can preform with or even out preform higher level tames. I was really looking forward to having a max level wolfspider that ripped and teared but I don't think thats going to happen, seeing as my random level 1 scorpion was doing more damage and *tanking more damage then all my other bugs combined.
All that said. I think eggs are throw away unless they are legendary, maybe pure. outside of that I'll probably just tame things instead of farm eggs as some of the higher level creatures have very low egg drop chances and farming a legendary egg wouldn't be worth the effort if the next OP tame in underlands content will out preform that at level 1.
