It's part of an incredibly outdated model, where they want the other person you want to play with to have go out and buy a playstation. Kind of a lose/lose scenario nowadays that goes back to whole idea of console getting exclusives. If you wanted to play a certain game, you had to buy their console.
Fortnite was a notable exception, and sony caved at the last minute when it became clear that they were going to be cut out of that giant juggernaut of a cash cow. On just about every other project I've ever heard of, sony says no. There crossplay between PS4 and PS5, but not with anything else.
There are several games (much than we think) Crossplay between Ps5 and PC (and sometimes not between ps4 and ps5 on some games so you have to verify each time).
And more since the last post on this topic
I played tons of games between Ps5 and PC... And sometimes even Switch ! :
Rocket League, Apex Legend, Monster Hunter Rise, Phasmophobia, aragami, Aliens Fireteam Elite, Back 4 Blood, Borderlands 3, some COD, even Deep Rock Galactic, Wich isn't playable between PC Gamepass and Steam xD).
And more to come (Baldur's Gate 3 !!!)
I even tried a game, Midnight Murder Club, already Crossplay in his Beta phase !

So it can be questioning on this one, and I think I read it was planned (but not sure of the source + sometimes it's abandoned cause too hard to make it work) but there is hope. "Sony doesn't want to" is not a thing, or or maybe on very specific titles. Maybe there are sometimes négociations to make but the real thing is it's technically a challenge cause it doesn't work the same and perhaps the architectural technical design of ps5 is not easy and it costs time and money for studios which can't always afford or succeed to make it works after months of trying (the reason for the instance of Deep Rock was that - crossplay between Gamepass and Steam needed to recode entirely some portions of the game so... Nope !)
