I have a big issue with finding fiber, There is basically none outside of the first area. So if someone could lead me in the direction on how to find more fiber so I can actually successfully build a base as well as keep up on my weapons that would be great.

Cut down plants like Rye and Foxtail. Both are good but Foxtail is best at 5 or 6 fibre + 2 or 3 seeds.

You will need an upgraded hatchet to cut down the bigger plants, like tachyon said. When making stuff, remember that:

Hatchets = resource gathering tool.
Axes = Melee weapons, cannot gather any resources.

Flint hatchet is currently the highest tier of hatchet.

Honestly, just doing a quick run through the starting area can give you 2 to 3 stacks pretty easily, if not more. So it might be worth the trip every now and then depending on where your base is.
Other than that, like Tachyon said, plants like rye, foxtail and cattail give pretty good amounts of fiber.
If you are close-ish to a beach foxtail might be your best option.

There is a literal TON of wood and fiber outside the Starter area. I go back there all the time for some easy resource gathering.
You just arent looking.

Rye just north of spawn. And so far you get the most fiber from soffel (No way am i remembering that name right but its a leafy plant on the beach) it drops 7 fiber per harvest with like 20 all right next to each other along with the foxtail.
