Groundbait information

How do you know what fish like what groundbait beyond what the pre-set recipes are? I'd love to make some custom groundbait but so few options for recipes.

Thanks. I do kind of get it. Like if you look at the weeklies you can see some fish are being caught on some form of Cream so you put a lot of Cream in a bait etc.
