To be considered proficient in Japanese you need N2 to N1 as a foreigner. I assume most native Japanese know all 2,000+ kanji as that is what is put into newspapers and magazines and they learned all the way through schooling. And those are just the everyday ones, not to include slangs or ones put into other magazines not written for the general public.

You can also use Hentaigana (And no it has nothing to do with tentacles or anything...) for free on the app store. They show how kana was shortened from kanji to what it is known today. So basically the older writings. But also helps your technique, as there are different ways to write certain kana.
