From that screen you can click on the offending shop and choose to sell it.
No idea if that gives back full functionality to the previous owner though.
Apothecary is by far highest profits passively.
Blacksmith gives +/- 0 profit passively.
Goods shop is basically 'losing money' unless you throw your own stuff there. The main use is perks levels/reputation.
By passively I mean just buying boxes and ignoring those entirely.
In terms of workers - apothecary should use 2 workers and they should work one after the other to cover full day.
Apothecaries use up the resources really slow so it's very low maintenance and very huge profits.
Blacksmith needs 2 workers but only because 1 needs to craft and 1 needs to sell.
Only work every second shift.
Uses up resources quite fast until you unlock all boxes.
Goods only needs 1 worker, only work every 2nd shift.
Goods shops should only be bought after you have no problem with cash as they are mostly 'draining' your cash unless you put huge effort.
Perk priority should be new boxes on blacksmith and goods, other than that - mostly focus apothecary.
