running a farm and traveling is impossible
I feel like I can't take care of animals and explore the world at the same time

It would be nice if you could hire farm hands for when you go exploring.

yeah that would be great but I don't know if they're going to implement anything like that

You can set your spouse to various orders, and in 1.0 you can also get your children (up to 3) to help out too, by using the Family Ledger and setting their schedules. They can feed the pets, farm, garden, study, make food, supply your shop, gather etc.

you should also add an option to hire someone if you're wealthy enough

Might be something we add post release, but there may be Fairweather items to help with this.

I don't really like the idea of sacrificing lifespan for certain features for necessary game features like telling time the dandelion thing this doesn't work
I definitely don't want to throw lifespan away for an auto feeder it's convenient but I rather get rid of the animals

You basically have infinite lifetimes with which to play (if the 1000 years you agree to is actually it remains to be seen). The years feel really long, too, so what is 5 years on one character's allotment of 60 years in the grand scheme of things? The game wouldn't be that interesting if you didn't have some hard choices to make as it's meant to be really long (the game of lifetime), and its one of the main mechanics/concepts. I could see you potentially becoming overpowered within the first generation if you just sunk all years up front on buying everything. How else should one acquire an autofeeder? Grinding planting crop X that regrows every three days and throwing it into a box until you can afford the autofeeder from the general store, like literally every single other life farming simulation? This is a fantasy world where mechanical things don't really exist and is trying to be different, so a mechanical time teller seems supernatural. The dandelions are supposed to be annoying... I hate them, so the clock is worth it.

there's nothing saying you get to keep the stuff you take to your next character

I'm 99% sure they will carry over. That's sort of the point of the game, after all. By the way, your animals won't die if you don't feed them. You only need to do so if you want to ride them (or possibly to get eggs? not sure on that one).
