All playable characters are listed on the game's website along with different versions of them

Selecting a character is easy as all you need to do is select them before a match or before you start searching for a match and you unlock them by doing small quests and then killing them in campaign (Example: if you want sans the skeleton but he's a ghoul so do investigator campaigns and hope he's in one of them and if he's a legendary boss you'll find him randomly)
