Ballistics will unlock a tower that attacks enemies in a similar way to the Mining Rods, mining resources. To craft these, you will also have to unlock arrow crafting.
You can also get a skill that makes slain enemies to drop gold coins.
Finally, you can use the economy skills to get more coins. Banks generate coins passively, but you have to interact with them to collect the coins. You can get more coins by picking up another skill and placing banks adjacent to each other.
Also, you can buy the marketplace skill. This should allow you to buy and sell items, allowing you to receive items you don't already have access to, but more importantly: You can sell items that you don't need and get gold coins in exchange for them. Even seaweed and berries etc...
The Shrine buff "Industrious" can help raise your XP farily quickly if you have a lot of structures constantly working during its duration. I think it can stack with the obelisk buff that grants XP for crafts as well.
However, after playing through the game I think I've decided on the best method of leveling. While its an intentional mechanic in the game, it can make things 'really' easy so I'll put it in a spoiler. To get the most use out of it, it does require some prep and items however:
Spirit Orbs, just force level yourself. Once you have max Stamina and and maybe a bar of hearts and some damage, just use them to level. You can get more from a Sacrificial Altar with the Summoning skill unlocked.
If you want to craft tons of these you'll need the Necro Rod, the Magic Scepter, Ballista/Drones, and a stockpile of Purple Pigment or a means to make a lot of it.
The Necro Rod can sometimes spawn the Big Skeletons that drop the Great Skulls making it easy to farm them next to a ballista or some drones. Having the Magic Scepter means you can use the rod nonstop and rack up a lot of skulls quickly. You'll just need a means of getting a lot of purple pigment, I'd suggest stockpiling all the flowers you come across or setting up mining rods in the Haunted/Frozen lands.
Honestly, you could probably start using the spirit orbs earlier on to boost yourself quickly (though I would wait until at least level 20 or so, since leveling is much faster early on). The game isn't too difficult at the moment so you can get by with lower stats (though I would suggest maxing stamina at least) and the benefit from getting certain skills outweighs combat stats imo. It may even put you in a position to make your own orbs relatively sooner in the game.
As for money, I found bombs were really cheap to make at a cauldron so I just made a ton and sold them to the market. They might need to tweak their selling price, though this was after I had a lot of economy skills so maybe that had an impact on their selling price.
sacrifice those orbs at doom shrine, it will grant either 3 levels at once or loot worth 20-30k per orb.
I didn't even bother with buffing stats and traded all orbs for xp and money while having 2 hearts and half of stamina bar, to buy all the land on the map and get cool skills
Towards the end, around 35 I had Markets and Shrines unlocked. I'd buy a Wisdom potion and sage scrolls any time they popped up in my markets and then for shrines wait til the Scholar perk comes up, us the potion and then use all the scrolls you collected and it will net you a large chunk of the xp bar, most of the time it was 2 or 3 scrolls a level up and every time I got the perk I'd get 2-3 levels.
Also when the markets have spirit orbs buy them. Around 55 I had so many I had already maxed out my energy and health and used the rest to do those last few levels.
