If possible that would allow for greater expansion in the future and more variablity as players could set their own restrictions. It also has the potential to help players fine tune their own difficulty preferences. And it means the burden of balancing/finding new challenges isn't on you ;)
Alternatively, the triggers for mobs/animals could be altered to also account for... percentages of a map tile that has landfill on it, I guess?
I think the whole challenge of One Island Mode is getting things done with limited space. If you could increase the size of your island, you would no longer have limited space.
Adding some options for customisation would be cool though.
I hope with the summer update's new feature hard mode will change recipes
