Bosses

Is there any particular order in what bosses you're supposed to fight? I tried taking on the mutated Ceratosaurus as the Utahraptor and got completely torn to shreds. Thought that's most likely because i'm just bad.

No there is not. I also reccomend stunning the cerato and attacking it.

Never did think about hit and runs lol. I always just stood there taking hits like an idiot lol. Does the health regen after being a certain distance away?

Health does not regen, but if you can outrun a mutant, you can eat/drink to regain it. Everything you attack just stands there like a lemon until you come back, so it's not too hard. Always stun and run (jump too). I personally recommend taking out giganoto first, as he's the only one I've managed to take down t-rex with. Giganoto can take down pretty much every other boss, as can rex, so if you take down giganoto and play as him, you can pretty much clear the rest in one game.
