I've got GFE installed so I'll use that to capture screenshots for now when using the photo mode. Thanks for the heads up! :)

Same thing happened to me! The screen dimmed / did a thing but the screenshots were nowhere to be found. Real bummer indeed, at least there are still other ways to capture screenshots despite, at least for me personally, being a hassle at times. I hope the photo mode will work as intended soon.
In my case, I turned off the "In-Game Overlay" feature in the GeForce Experience app (which, as it says, "Easily records videos, take screenshots....", yeah, this is exactly what caused the problem), and voila, in-game SoTR screenshots now work and save just as described and intended.
So double check if your graphics card (whether NVIDIA or whatever else) might be doing something annoying by default to take over or interfere with your recording/screenshot.

You just go to view in steam then go to screenshots and then you'll get a drop-down for all the games you've played and can pick them from there and access the file locations.
