Yammar: Up left/upright and special attack
Wolfang: Up and special attack
Scaravich: While in the air, up and normal attack (WHY, CAPCOM, WHY?)
Shark: While in the air, down and normal attack
Heatnix: up and square (might have to be on the ground)
Sheldon, Turtloid and Majinninnijijnnion: Uh... I don't remember.
I might be a bit off on the ones I even claim to remember, since it's been literally about ten years since I last played, but just play around with it a bit.
I thought it was bugged or something like that

Sheldon: Has to be selected from the menu, as far as I know.
Mijinion: Right Trigger (R2). (i.e. Giga Attack)
Turtloid: Down + Special (Can be spammed, turning Zero into a "water blender")
And yes, Heatnix's must be done on the ground.
Wolfang's allows for the high jump anywhere, but the ice part of the attack requires Zero to jump onto a ceiling and dash on it. (Which cannot be done in Turtloid's boss room (ceiling's too high), meaning you cannot use his intended weakness against him)
I also believe Wolffang's is Up + Jump (again, the attack part only happens after Zero is clinging to a ceiling).
