Sounds like the biggest reason is that optional focus tree for the field trip (something like 50 Img and 100 Str, before the 10th month).
That one's a bit rough to meet.
(Especially when you do like me and pick Performer, Ark-Born.
And then concentrate on IMG.
Even after one year, my Ciel is still at 47 Str and about 10 Int. (But her IMG is really high))
That's fine.
I use an Xbox 360 controller.
To handle the deadzone issue, I found it helps to use the D-Pad for the card game segments.
Before that, I tried to use a keyboard, but realized my keyboard won't register 3 key presses at the same time. So I couldn't hit Up+Left+Space at the same time, for instance.
(I haven't tried the Numpad yet, so I don't know if that'd make a difference.)

By the way, on the schedule menu, the aesthetic for an event is nice.
But I have a hard time reading certain things (like it saying "Skill Capped" or "Important Event"), to the point I had to really strain to make out what it's saying.
Not sure what's needed for that.
(Such as Envelope Maker and Sketch Seller.
Both raise Creativity and Drawing. But I'm not sure which is better. Or if the gains are the same.
The only noticeable difference I see is that Seller has slightly less stamina loss and earns slightly more money)
I don't know if there are activities with double arrows, or a different colored arrow.
I've tried, but only get about 900 - 1,000 before I run out of time. Is there a secret to doing well in those, or is my stats just too bad?
(My Ciel's stats are: 97 Str, 9 Int, 22 Cha, 159 Img, 9 Spirit)
Likewise, in fights (the red Battles), I'm getting clobbered. But I figure that's just from low stats.
(Lastly, in the ones where it talks about "keeping rhythm" I fail, too. Is it just me not scoring well, or is there a trick I'm not getting?)
Use Techniques. For Score Battles, in particular, with Yellow Techniques. They give significant boost. While the CHA is low for Score Battles, with long, unbroken Hit count you should be able to accumulate a good amount of Hit Multiplier for good Score. Hit Multiplier does apply to Techniques too.
For Battles in general, you may want to increase INT so you can use Shuffle more quickly without any aid of certain Techniques. One can’t cancel any attacks with empty cards. Alternatively, on Fight Battles while still keeping the Hit count try to time the Executes for cancelling opponent attacks. It will protect you.
For Battles with rhythm, while the key is to follow the rhythm of the BGM, Techniques are allowed too, and they can get the boost from rhythm bonus, around 1.5x when succeed. Ciel will tell you that the rhythm registers when there’s a green circle surrounding her after the Execute. When matching, 1st and 2nd set doesn’t have to follow the rhythm. Just the 3rd.
STR based activities tend to reduce weight the most, so you may want to check if that's the case. INT and IMG activities on the other hand have weight reduction factors the least. For meal set, Lavish Meal Set and Student Meal Set works the best. If you want her to gain weight even more quickly, you can "spam" her with consumable items such as the Cheesecake.
What do I need to do to uncap the skills so she can progress towards rank 6 and higher? Is it just overall game-progress based, or do I need to unlock traits from the associated stat focus?
Also, is there any particular stat or skill that's tied to her Stamina max? Even with the Surface-Dweller background, without Juno as a support during exploration for the stamina cost reduction, I've had her run out of Stamina starting from full when exploring the first area (and I even declined to spend extra stamina in a conversation encounter). At this point it might be less of an issue, since her max is up to 180, but I'd like to know what to focus on so I have more leeway for long explorations.

Most of us haven't finished the game yet, and don't know about that part.

Well, one trick is to have your character work Overtime.
The trade-off is he loses affection with Ciel, but in early game...it's not like she has much to lose.
But you want to get Ciel's skills raised as soon as possible, to unlock small jobs for her to help.
I see thanks, I started the game and went on a spending spree and spoiling Ciel lol, thinking that there's a salary or stipend like in the Princess Maker games at the end of the month.
Nah, you working part-time or overtime IS the stipend.
Your character works at jobs, independent of Ciel's activities. And makes either 150 or 300 per day.
So, he covers the cost of her allowance, her food, and pays for her lessons. Anything left over gets added to your total.
You want to save up if you want to buy stuff.
(It's also best to not go too crazy with using items, as a lot of the effects can be done with a week of your character working at "spoil" instead of working at a job (or supervising Ciel).
The game doesn't really mention it, but it seems if you're spoiling her for the week, her Rests restore way more stamina than usual.
And you raise her affection for you.
The drawback, is that you're not working, so you lose 500, plus the cost of the food and Ciel's allowance, if any)
