If you allow your Marshal to go on a Crusade, he'll receive a bunch of special troops, including Teutonic and Templar knights, if he then succeeds, you get to keep all of the units that survived the Crusade.
aren't teutonic knights somewhere around the teutonic order lands?
Playing as Germany you get a bit privileged roster, you get access to Men-at-Arms, Feudal Knights and Crossbowmen right off the bat, many kingdoms, even European ones, can only get at least one of two or those through province-exclusive recuritment.
EDIT:
You can get both Teutonic and Templar ones, mounted and foot for Crusades, as well as Normans, Halberdiers, Horse Archers and couple others pretty exclusive units. They don't appear in Prussia region and surrounding provinces until late game start.
so yeah, late period, conquer stuff around the teutonic order lands
Also if you see random catholic nations with tuets or templars its because going on a crusade puts a random number of those units in your army.
