Report a translation problem
The only real problem you have is getting "Fine Art" since you need a Cathedral for that and pagans don't get the "Art Schools" as upgrade for them. Only option for these is to import them from another nation. So keep some friends around, when you conquer Europe and beyond.
In my game (normal difficulty, mongols are pagan), odds to change religion was 9% for catholics and 11% for chiite muslims (bonus for owning Bagdad city). Was lucky it worked the 1st time, but with max realm authority, 18 provinces converted to my culture and pagan religion, well-trained cleric so on.
I suspect something can be fixed in your game if you get -200% chance :) Not saying you play bad, but you can hover the "change religion to catholic or muslim" button to see what is the breakdown making minus points and help to improve the odds. I add a screenshot to show my state before trying to change religion.

just conquer a province that has a university and you're good to go.
the Pagan "Age of Triumph" kingdom advantage is there to make it easier to hold onto provinces that have buildings that are of other religions, even.
