More than 9 provinces?
When I reach more than 9 provinces, will that mean I will have to leave them ungoverned or is there a way to have more governers than knights?

You only get nine governors. Which means extra provinces will be ungoverned. Part of the strategy is moving your governors around so they are the most effective.

Yeah you can think about it like in medieval germany. A Palatinate or actually Königpfalz is a building from the Middle Ages. This meant a house in which the king and his people could spend the night. The word comes from Latin, as does the related word palace. In the Middle Ages, the German kings did not have a proper capital but did travel around in the empire, and so his fellow people. And you can think of this in a similar way. Greetings from germany.

I would before as you get bigger you gain 2 or 3 Knight slots and it would be nice to have governors with limited power and the ability to defend the castle .

Like, keep 9 provinces and vassalize the rest?
Kinda like Crusader Kings has a demesne limit and the rest are vassals

You should consider the extra provinces as normal 'lands' and the governed ones to be 'bastions' that should not be lost, I move them according to my frontlines to make sure that I can make the provinces have better stability. your oldest provinces will most likely have quite decent amount of standing because they won't be rebelling even when you are getting high amounts of war exhaustion from prolonged war efforts they tend to be in the positives while the newest additions can be negative, the likelihood of the AI going a round trip all the way back or to bypass regions entirely to pillage is extremely small as well.

also, more lands = more chance of mercenaries spawning in your lands when starting wars, mercenaries are quite valuable to make short work of a smaller nation, or to prevent the worst outcomes when dealing with multiple nations or a large nation with alot of attack vectors.
