If you wanted an easy mode that can be painlessly beaten without any kind of walkthrough, just ignore every extra levels, open the 3-flower gate and clear the (early) ending level. (Though the early ending level is still pretty hard.)
The levels would be just stripped of all interesting, Baba is You can be so fascinating because you have to find out the "trick", if there is no trick the game wouldn't be fun or interesting at all. There are easier and harder levels in the game and you can chose the order how you tackle them, even end the game earlier, this must suffice. The game has no story anyway and you will gain no satisfaction finishing it just for the sake of finishing it.

Try SYNTHETIC GENESIS levels for Baba is You {BETA}! They are really fun, and the difficulty seems just right for me; calming enjoyment instead of head scratching frustration.
I think the design approach of your levels differs from the main campaign often times they are rather gimmicky and more or less work with the visuals of the levels. Every level feels like a little minigame where the rules are different, while the main campaign really feels more like an programming puzzle game with an rising difficulty edge.
I can understand that both approaches stroke to a different demographic or in my case I kinda like both.
