Is it supposed to be slippery?
I looked at a couple of the worlds available (don't know if those are ones that the devs threw together to package with the game or what) but it felt really slippery and fast, like I barely had any control over the characters. Is that the norm?

Hi. That is not the norm. Within the editor (create) you can right-click your character. This will allow you to tune speed for all manner of stats. (Be sure to replace the character after editing stats, as modifications only save if you replace the character or item etc over the top, sort of like PAINT).

Those slippery levels are mine (I know devs well but not offically dev), super meat boy type speed. They are absurdly difficult and only reflect what I like. They were happy to include them in package but definitely not the norm.

The default speed etc is based on LIFE OF PIXEL, devs older game. Hope this helps

Does changing the speed of the character in the editor reflects changes on already uploaded worlds that you play?

No sorry. That would be cool, but in this instance, there's no way to be certain levels could be completed. There is considerable chance the momentum, jump height (etc) as set by designer - is required (or only way) to get to end.
