p.s.: have tried and liked these two and also TGC (the grand campaign) and peace without victory (don't recommend it, but to each his own)

I personally enjoyed Modern Day Scenario (there is a 1.05.1 compatible version on the paradox forums), New World Order 2 and Thunder in the Sky the most.

not as far as I know, but you can unite the EU under one country that you control. there are also far left and far right leaders in the game for basically all the major countries that you can instate by using the political sliders. you can just use the "freedom" cheat and go far right at the start of the game, for example.
