You need to press F5 on your keyboard to bring up the ScummVM menu.
Use the Save option to save.
Also, I needed to unbind f1 button with Win10 help on my laptop. Here's the topic about this:

And then Ctrl + 1-9 quickloads any saved game in that slot

Tried that, and no saved game appears even though a text previously said so on my screen...
My available slots are ranked from 85 to 90 tho, maybe that's where the problem in my impossibility at saving lies
Thank you mradam83!!! This TOTALLY worked!!! I had to press CTRL + F5 to open the ScummVM menu to get to there. I didn't realize there was a separate menu than the one for the game. You rock!!

A lot of thanks as you made my day, I was worried that if I wouldn't save my progress in the start then I might've to go through all the cut scenes and demos again!

I'll also post this as a normal post, but since I saw you had the same problem, Igor, I also post it here:
I was having trouble saving my game in Curse of Monkey Island on my Mac, in spite of using the (fn+F1) ScummVM interface. When I saved, nothing happened - no save actually got saved.
So my problem was not that I couldn't find the menu for saving, it was the save not actually happening.
I researched around and found that, while it seems others have the problem, usually the proposed solutions only go as far as pointing out how to get to the save menu (as that can be slightly obtuse in itself), though I think some users might have the same problem as me.
So, for anyone unable to do the ACTUAL saving, the problem is in the modern Security and Privacy settings for Mac - CMI needs to be allowed to write to the disk. The solution is:
- The game needs to not be running.
- Go to System Preferences->Security & Privacy -> Press the Privacy tab on the right in the top -> scroll down to Full Disk Access on the list on the left -> Press the + button at the bottom of the list on the right side, then locate the folder containing the app, highlight "The Curse of Monkey IslandTM.app" , press confirm.
- Try going into the game and test that it works out, it did for me in any case.
I'll edit my comment, as I continue playing and see what pops up.
First, Windows users, it's ALT F1-10 to save and CNTRL F1-10 to load.
Enter - pulls up coin
Space - pauses game
E button - examines items
T button - talks to items or people
U button - uses items
I - inventory appears
Tab - inventory appears
F11 - decreases subtitle speed (can't figure out how to increase it)
CTRL Z quits the game
SHIFT EXIT - Debug mode/command line box shows up. You'll need to type "exit" to leave it.
SHIFT W - says (Are you sure you what to win)
The [ ] buttons can decrease or increase music volume.
Right click mouse and inventory appears
Played this when it first was released, luckily muscle memory recalled fn + f5 button opens the menu for saving and loading. You then need to go back to the launch menu (I think its called that in the game) and there you can also change the graphics options to OpenGL to get better graphics, saving game, loading and exiting the game.
