Second, this is a strategy game. The gameplay will probably decide more than the style, and though I'm personally a big fan of the SD style myself... Trust me when I say it used to be even pudgier than it is now. For the gameplay, all that cinematic stuff you see in the trailers are all attack animations, but you'll probably not be doing much in terms of controller activity.
Third... If you're more of an action gamer, the games you're looking for... are not on this platform, unfortunately. You'll want to grab a PS4 or PS5 to play things like EXVS.MBON or GBO2/Code Fairy. Most others are either not worth playing (such as the only other fully Gundam game on this platform, New Gundam Breaker), are on much older platforms (like Dynasty Warriors: Gundam), or are Japan-exclusive (like Mobile Suit Gundam: Side Stories, and even then some of those JP exclusives are not exactly great).
Well, these squeezed/big head Gundams... I just can't get anything out of them.
I just like the original style.
It doesn't matter if it's a strategy or action game... the look... powerful war machines... that look like they were made for 6 year old kids...
As for the look itself... Fair play to you if you can't get anything out of 'em, strategy game or not. Unfortunately on the strategy side of things, the only non-SD Gundam strategy games I know are Mobile Suit Gundam SEED: Generation of C.E. (which was essentially a Gundam SEED version of G Generation, but with full proportions and a multitude of endings... I'm not sure how good it was though), and Mobile Suit Gundam Gihren's Greed, a series which remains Japan-exclusive and allows you to play as the other side of the One Year War, with multiple branches of its own. Both aren't exactly easy to come by, so I'd probably stick to the recommendation I threw out there before.
I'll add one more thing to it, though - I'm not sure how far along they've come since the last time I heard about it, but there's currently a game called GUNDAM EVOLUTION in development, or GUNEVO for short. Think of it as... Gundam Overwatch. Seriously, go search it up.

The original Gundam models look like real war machines. The squashed together something really resembles dolls that children play with.
If you don't know such dolls, I'm sorry, of course. It must have been a tough childhood for you.
As you said yourself, simplified kits, adapted to the mainstream, also suitable for children.
Not everything the masses like has to be good. The fashion industry itself never has good taste, is intelligent, etc....
The tip with EXVS.MBON was really good. It will be added to my collection soon.
Nevertheless, I hope that the anime and games will go in a more martialian direction again.
Quite frankly, in a few cases the available SD-kits (especially newer ones) look much better than the HG-counterpart, and aside from the obvious oversized head they still look a lot like their respective originals.
That Cross-Silhouette Phoenix or Sisquiede, or the BB Senshi Unicorn-kits look pretty amazing (but I wouldn't mind an RG Sisquiede).
but If prefer gundam story try this one.
And in general, they actually try minimizing the use of stickers... the examples I mentioned have much less stickers; the BB Senshi Unicorns come with decals though.
But then you still have relatively new kits like the BB Senshi Barbatos which comes with a ton of optional parts but also sticker galore deluxe; or the CS Crossbone (both are cool kits, but you'll really want to paint them).
