How does the grind work here? Do we replay story missions? Or are there procedural missions / skirmish missions in between story missions (as in Fire Emblem, XCOM etc)?

Replay missions like any other SD Gundam G Generation games.

You can replay any story mission you have beaten, AND you can skip the first part of the stages that have such if you feel like just grinding your own suits and not also the guest units for the get gauges and dispatch tickets(beating the first halves challenge nets you a ticket as does doing the bonus in the second half, which gets you the secret units that should be capture-able, they weren't in the demo sadly might change in the full game though since it is a series staple).

Is grinding really necessary or can we use.... strategy too?

you could, but the unit/character veterancy make a difference in battle. the battle system takes attack/defense% into consideration. also if you want to get 100% on unit completion, it helps. ;)

You must grind lol well not really but why wouldnt you? you need money to build units and buy characters, need XP to level the characters and gundams/ships and to get abilities and parts. So a certain amount of grind is best, but you can prob skip it and squeze in by the skin of your teeth if you prefer

Actually, is it any challenging at all? I remember another SRPG that came out lately whose forums kept yelling how stupidly easy it is compared to its predecessors. I hope this isn't the case with this too.

For the most part, grinding's just for collecting everything. If you just want to get through the story you generally don't need to.

Normal is easy. then there's hard when you have veteran units/charcters and extra for when you're willing to risk losing MS for capitol or higher skill levels

at some point your character levels will make it more worthwhile to clear the harder level stages.(i also recall there being hard clear/extra clear as additional challenges/acheivements).

If you use all the top tier suits like the protagonist Gundams then no, it's incredibly easy. There's some strategy you need to use in the beginning when your units are weak but it becomes easier the more you progress. G Generation games are more about fanservice than being an actual strategy game.
