What stone do you use?
I have used lots of stones with lots of different characters. Usually I start out with one of the three basic standing stones near the village where you start the game, but over time I try different ones.

I have to say though, the one I go look for almost immediately is the Lord Stone. It protects you against physical and magical damage.

start off with one of the three basic stones depending on what I want to go with first. Then after some time get the Lover stone (easy to get to) and then after that Atronach Stone - because it's the best stone in the game.

EDIT; If I have the dawnguard Etherium head band that makes me able to use 2 stones at once, then I go with either Atronach+Lord stone or Steed stone + Lord stone or Atronach stone + steed stone.

I switch between Steed and Lord as well. Steed in early game, Lord later, generally. Though when I go into powerleveling mode, I'll sometimes go over to Lover.

I always have Steed, just because I usually use a heavy-armor character, and having half my carrying capacity being taken up by my equipped armor is no fun.
I start with the Warrior because, as a mage, it stunts my level-up. Then, I go straight to Atronach ASAP. I want to "level at my own pace" rather than get level ups through skills I don't want to increase. Thus, I don't want faster gains from Lockpicking or Spellcasting or anything.

i perfer the Purple Kush stone most of all
The Stone which allows you to learn new skills and level up faster. I am impatient.

I use warrior to get one hander up then change to tower stone for lockpicking

I change back between the thief and warrior stones. Usually stay with thief until my sneak tree is maxed then jump to warrior.

Like most everyone else, I start out with the Guardian Stone for whichever "class" I happen to be playing that character.

I then move on to Steed at some point (how quickly depends on whether or not I use Heavy Armor), usually when I start having too much crap to carry (mostly due to Alchemy - amazing how fast potions pile up when they're so pricy you can't sell more than one or two at a time to each merchant :P), which tends to be the late teens or early 20s.

Then it's off to the Lord Stone for late game protection (Lord + Mara + Ring & Amulet with 20% magic resistance 'cos of Enchanting is very, very nice since I invariably also boost an armor skill).

Ever since morrowind I've been partial to the serpent (mainly for roleplaying purposes, where birthsigns/stones were said to influence your personality) because I liked the "unpredictable behavior/wanderlust" associated with that stone.

In skyrim I use a mod that does away with standing stones but lets you choose a birthsign at the beginning that's perminent and to this day I choose my sign more based on the personality of my character than the benefits it gains me (for instance, I wanted to be a "hot tempered" mage rather than an "cold and arrogant" one so I chose warrior as his sign rather than mage.)
until I get my skills up a bit guardian stone,
if I play class in which I put level up points on health I choose steed stone (like to carry lot of stuff with me) so lack of stamina won't be a problem
but in normal classes I build stamina quite a bit and stay with guardian or some other skill stones for some time

taking dozens of dragon bones and scales ain't an easy job
