I have a laptop with a GTX 460m [a GTX 560m is just a higher clocked GTX 460m] and I can play at a maximum setting of high detail settings at 900p [50-60 fps].
The culprit is most likely the GPU, as your Sandy Bridge quad-core CPU is already pretty good.
As for "upgrading" your GPU; it's not possible [you have a laptop] unless you have a CLEVO based [SAGER, etc..] or Alienware laptop.

Running a game on a laptop even with your settings will KILL the laptop itself. Running a game like skyrim on ultra will just fry the processor as processors do not have large enough cooling blocks+processor fans required for hard core graphic games like skyrim
Good luck on getting your laptop repaired in about 3 months if your planning on running it on ultra and i assume your gona be playing it for more than just 1 hour a day.
just run it on LOW settings and play it for an hour or two and then leave it alone. Laptops are not designed for games like this to be run on the max settings. Games like this and bad Company 2 and RE6 and various others will KILL your laptop if your planning on running games like this which are graphics heavy.
Save your cash and get a gaming tower/desktop. Check on ebay and you will find real decent models with good processors+powerpacks (you need a high quality power pack if your running high graphics+powered games everyday) graphics cards and others. My gaming pc cost me about £600 and that was around 2 years ago and i havent had a problem with it once (touch wood) and have been able to run everything on max settings.
True, I have a pretty decent laptop which is nearly 1 year old now. I'm able to run Skyrim on lowest settings, with a few graphical mods installed. I however, have not been able to play skyrim for longer than 2 hours in a row, because of crashes.
I can live with it, I save often and I never lose much progress. It is annoying at times, but this is the only way to play skyrim for me, aside from getting a good desktop.
However, I'm not sure whether playing Skyrim for a good couple of hours a day will have a drastic effect on a laptop's lifespan. Sure, the more you use the laptop, the quicker you will have to replace it, but that is regardless of playing a demanding game like skyrim.
Think of it like this
Laptop processors and fans work different from desktop/tower fans. In a tower if i turn my pc on then the processor fan kicks in instantly and STAYS ON.
Now im some laptops - well most actually - Because they are downgrades and have to be made smaller then the processor is given a much smaller cooling block AND a much smaller fan. Now alot of processor fans do not actually stay on constantly and instead do a Stop+Start method.
IE when you turn the laptop on the processor fan will stay on for a while and then stop for a little bit depending on what your doing. Running games on a laptop make the fan stop and start but it doesnt really stay on 100% like what a tower fan does.
So if your running a game such as FootBall Manager then your alright as thats not a heavy graphics/processor demanding game. However running a game like Bad Company 2 FORCES the processor to work much harder than it was originally designed for because the processor fan cannot keep up with whats its being asked to do which eventually leads to it giving up which can then break your processor as you are not 100% sure the fan it working alright or not
Say for example i ran Resident evil 6 on the Opening Posters laptop. I can assume you running a game like this on max for just 2 months will crap out the laptop and if the processor fan stops working and then it breaks the processor itself then your laptop isnt just broken - its possibly junk as i know some places in the uk will not repair a pc if it comes down to the fact you OverClocked your processor or tried to push it harder than what it could handle

My previous computer could only run on "high" with skyrim, but with this "mod" I linked I could suddenly play on ultra without problems. Just make sure to read the instructions.
If you were able to run on at least "high" before, then this might be all you need if you are lucky. (and as always, before you download a link from any suspicious stranger on the internet, read the comments of the poster(click the arrow pointing down to the right of the username, and choose "view posts") and his profile (mine in this case) to make sure that he isn't just a bot, and also see what others say about the specific download on the comments over at nexus)
weird.. i have a laptop and i run skyrim on ultra settings, maximal visibility ranges, 8 times AA, 16 times antrosopic filtering, FXAA on + a realistic water mod at 80 fps .. today only (already had skyrim but bought it on steam now) i just played about 4-5 hours in a row without even a slight hiccup and neither my CPU or GPU got to any temperature that would be bad even when playing for 500 hours in a row... (CPU was around 50 degrees while the gpu never even hit 80)
Ive used my last laptop to play skyrim for 2 years and many hours a day (it was a hacked version of the game.. i will admit that, but ive bettered myself :P) and only reason i dont use that laptop anymore is because i sold it and wanted to upgrade even though it still was in perfect condition and working perfectly fine.
You might apparently know everything about laptops ... but from my experience as a laptop-only user for the last 15 years and both a mediadesign as well as indie game design degree i still wouldnt agree :P
Sure it takes more money to make a laptop that functions as well as a same quality desktop and i know laptops have a tendency to cause heatproblems...
if you dont ♥♥♥♥ around with overclocking stuff to much and adjust your laptop to your precise needs (i prefer assembled laptops over prebuilt ones), even that wont cause any problems.
I probably wont convince you and you have a point, but just saying i kinda disagree with it :P
I however will agree that OP's laptop will be heated as hell, but saying all laptops are like that would be prejudice
The technological gains have directly affected laptops [smaller die cores, better efficiency, less power required, less heat egenerated, better cooling designs, etc...].
I've used my older gaming laptop as my main computer and have played games on it on a regular basis now for 2.5 years straight. No problems.
However, as a laptop owner, people need to realize that you need to CLEAN YOUR DANG VENTS/FANS ON A REGULAR BASIS. If you do not, then they will clog with dust and overheat your laptop.
