For me headshots usually have resulted in instant kill/major damage caused. (playing on expert difficulty)

I smiled when I read this .. reminded me of the phrase - "We have an app for that!" (cell phone related.)
I try hard to do head shots and thought for sure I "had it" ... but as I started to pay attention, as one can - the NPC can move just 'enough' and sometimes I hit the shoulder - arm - hand, depending on the motion of the NPC, since they obviously are not standing still.
Also I found, and I'm not using any special mod - that certain arrows do more and/or less damage if head shot is not achieved and thus it may take more than one arrow of various kinds ....
Since there is no hit location recognition in Skyrim, trying to achieve headshots will not cause increased damage but may cause your shot to miss if you do not properly account for the arrow's trajectory.

Yes - why I like the bow. There is more of a challenge to it. You do have to account for certain things .. speed of the NPC/Animal and such ... distance ... and.
They are a lot of fun to master. In all three of my play throughs (first 2 due to Steam Crashes) - I started to go for different weapons, but they were less of a challenge to master and just found myself, "you favor the bow, huh? ..." Yup - I guess I do! :)
