Yea, I have a 6970 and stuttering was a huge problem because of the antialiasing, but I've never had what you have.

This has happened to me before, too, and not just in skyrim, but in everyday activity. Its your cpu usage I think. But im not really a super professional, just trying to help..
Edit: but then i do have mods comming out of my ears and eyeballs..
