Decapitation, cannibalism, and blood splatter are probably the main reasons.

Also, alcohol consumption, that will get a game rated "M" just about every time.

Well, according to the game case, it's rated M due to it containing:
Blood and Gore
Intense Violence
Sexual Themes
Use of Alcohol

That pretty much sums it all up. I'm certain you can find a plethora of examples for each, just in the vanilla game alone.

Good point. I'm surprised they didn't include Use of Drugs, or at least Drug Reference. Maybe it's because it's a fantasy drug? Either that or because the effects have been toned down a bit since Oblivion.

Actually, looking at the list of ESRB content descriptors[www.esrb.org], they were being pretty kind to Skyrim. They could have had A LOT more included than the 4 that I listed above. Granted, some of them are just different tiers of the same thing, but there was nothing to do with drugs, or strong language, or crude humor (let's face it, TES can have some pretty dark humor at times).

Be grateful they're not rating the game based on community mods ;)

I find it odd that some people think scantily clad women should be rated more adult than something involving blood and gore. If I had children I'd much rather them see a woman in a bikini than some guy's head getting chopped off.

As would I, however, there's a lot more out there in the Nexus that goes beyond just skimpy clothes.

The vanilla blood is super low-res plastic, but any and all instances of gore get a game a mature rating. The decapitations got the game the mature rating. Use of Alcohol? No, plenty of T rated games have that, in more obscene amouts. Oblivion was at first rated T, and that installment was MUCH more severe than Skyrim, at least without mods.

Yeah. I get most of my mods from there. I suppose I should check out some other sources, but I guess I'm lazy.
