If you don't mind that, you can use SoftTH to set a custom resolution for Skyrim and then flawlesswidescreen to adjust the hud to fit your two monitors. You should find both easily via google.
Another downside of this method is: your steam overlay will probably not match the position of your mouse. That means you can not click the buttons of your steam overlay while ingame, or at least have a hard time guessing where they are.
I'm using three monitors with the above described setup and it works without problems.
You might want to adjust the fov of your game after setting up two monitors. It's an ini setting.
I'm pretty sure there is one on skyrim nexus somewhere. That allows you to leave the game (when in menus) with the cursor without minimizing it.
