The only option here is to find (or make) a mod for that helmet that accomodates the elf ears - but then it'll probably look wierd and too big on the non-elves.
The way that this is fixed is through the actual data of the helmet.
Every part of your character, and characters in the world, gets assigned a 'biped slot'. 31 is for hair, 40 is for tails, 42 for circlets, 37 for feet. When you equip armor these slots are taken up so that the relevent part of your model stops rendering so that it doesnt clip etc
The problem you are having is that the data for those helmets is NOT taking up biped slot 43, which is for the ears.
There should be a mod around to fix this, all it requires is that it takes up the relevent slot. I personally don't know of one as I havent encounted this problem, but you can always take alook around.

The problem is that he will either have to edit the last mod that edits the helmets, or create a new mod to do that and then merge all of the other changes into it if he runs mods.
You also have to edit the Armor AND the ArmorAddon record for each of the helmets, and make sure that those variations also carry into the enchanted versions of the helmets and that it loads properly into game, which requires some knowledge of the CK and its naming structure. Hence why its best to make a new mod so youre not fiddling with the main skyrim file.
