To my memory, the plots of land won't appear on your map until you purchase them. You must indeed achieve Thane status with the relevant Jarls before you can do so.
This exactly. Lakeview Manor is a great site, and if you build it yourself instead of paying your steward to do it, it'll be less expensive and raise some of your skills at the same time. Not a bad deal, at all. The bandit quest for the land is easy, too.
This is very important. I wouldn't have bothered wiith the Alchemy Lab if I had remembered about Riverwood in time. *lol* You can add an east, west, and rear wing to your Manor, but only certain things can be built on each side.
I said for it to natuarally occur.
You simply have to complete the Jarls quest in each hold to have the right to purchase the houses or land.
It is the Jarl's steward in each hold that has the dialogue for this.
