It's often rare out in the wilds to get 2 handed weapons so even if I start with them it doesn't take long to have far better 1 handed weapons if you aren't smithing your own gear due to being a cheapskate. I'm a looter, 80% of my gear is scavenged all the time so I typically end up dual-wielding one handed weapons.
I'll be smithing and using enchantments
For my wife and I it is 6 of 1 and half-a-dozen of the other. I prefer two-handed and she prefers dual wield. With mods, though, dual wield is indeed awesome.
Yea the only thing I don't like about duel wielding is how open it leaves you.
The problem is with the companions. You'll be looking at either a mage or a ranger (Feandal early game), but their limits in ruins are obvious.
For 2-hand: Since you're playing with heavy armor you'll be slower which can suck, light armor does have it's benefits because you're not only faster but more nimble in that you can move in, strike, then move out of the way so the need for blocking is less because you're more mobile. However, with heavy armor you can take more damage (*theoretically...i've been full Ebony and still been 1-hit killed by Briarhearts). Again, make sure 2-hand, smithing, and enchanting all all the way up for best weapons and 2-hand enchanted gear. Add to that Fortify Two Hand (Fly Amanita, Dragons Tongue) which can set your damage higher (higher still with 100 alchemy and fortify alchemy enchanted gear). Finally, there are some weapons i'd recommend: The Longhammer, it's an orc warhammer with an enchantment that makes it lighter and thus able to swing way faster than normal. The stats are "eh" later in the game but the speed-like mentioned above-means more hits on target faster and thus more damage, AND the enchantment is natural which means you can add an enchantment to the Longhammer. The Ebony Blade. Stats are poor but it has an absorb health ability that is beautiful. I've gone toe-to-toe with dragons baking me with their fire breath while i'm wearing plain light armor and swinging the Ebony Blade...not only did i not die but at most i lost maybe 10-15% of my health which i instantly gained back. Finally, depending on the DLC you have, i always get Dragon weapons because they are the best in game. I like a Dragon Bone Greatsword with an absorb health enchantment, maybe a fire enchantment also (if you have have 100 enchanting and the top most perk). That greatsword together with the 2-hand enchanted gear and 2-hand potions can be beastly, i have 1-hit and 2-hit killed dragons before.
