I'd also suggest crafting weapons/armor/pots so you have less to buy, but if you're super-serious about roleplay then you might not think that's right for your character either.
The one final alternative is just to change the way you think about it. These games aren't set in modern economies where the supply and demand make selling for a profit difficult. Skyrim's a harsh land in the middle of civil war, and frankly certain goods would have more value to most people than currency. It should make sense that certain smiths, unable to keep up with demand for their goods, would gladly buy your looted or crafted weapons and armor.
The unrealistic things, imo, are that the players possess ridiculous carrying capacities, and that we always see widespread use of currency, but no mints/treasuries/banks are ever to be found or mentioned, despite visiting major cities and seats of governments.
About no looting, is that exclusive to humans? If you dont loot things like dragons and animals you are going to have real trouble with crafting. Dragons are also a good source of gold as they usually have 600+.
Markarth has a bank/mint type place. Better recapture their gold mine from the Forsworn right away, huh? AFAIK, you can't make your own coins at either place. You can make plenty of gold ingots at the mine though.
My suggestion to you would be to mine for silver and gold, use transmute when you run out of either, collect gems and make jewelry. Sell the jewelry at the jewelry stand in Markarth and in general stores everywhere. Think of these shops as being pawnshops!
