Install the unofficial Patch for vanilla Skyrim. It is supposed to fix problems like this.
Wait three game days. Go exploring or do another quest then come back and try again.
Lower the difficulty temporarily to novice so you can bring Odahviing in more quickly without dying. I found that this glitch happens mostly when my character dies and the game restarts from last auto save. Hope some of this helps you.
- Start the combat
- Open console
- Target Odahviing.
- disable [ENTER] (make sure he disappears from the screen and do not close the console)
- enbale [ENTER] (He should reappear with this command.)
- Close console
This should reset Odahviing and remove his immortal state. Same fix applies to Alduin.
Eh... you are not supposed to kill him.
