Should I kill Erandur?
I really need help. Is it better to kill him or let him live?

If you are going for the achievement that requires all Daedric artifacts, then yes, you should kill him. This will let you keep the staff from that quest.

Otherwise I usually let him live; I like having Joshua Graham follow me around Skyrim.

I hope that helps.

I tried letting him live in one save, and brutally murdering him with my elven my in another. The second one was the most fun, but I went with the first.

Neither is better. In one case you get to be evil and get an evil reward. In the other you get to be good and get a good reward. Does your character not have characterization? What would your character do? Is he/she a good person or a bad?

This.

My character started out as a goody-two shoes but as he saw the horrors of the world he started desensitizing to the value of life. He will kill if he has to- but he tries to avoid it.

In this case he would kill Erandur.

Stab him for another fancy stick to place in your house's weapon rack.
The Oblivion staff looked tons cooler though.

Aint that the truth? Most of the Daedric items end up in a chest, a rack, or a mannequin.

let him live and destroy the staff, if you play as a goody-two shoe.

I killed him cause he annoys me. But that's just me. Go with your character's morals, makes the game more fun :)
