Is there anything I should do before joining stormcloaks/imperial?
Like, will this lock me out of some quests or not?

Yes. You know that argonian in Solitude that always wants you to work. Do his mission before you join I/S. When he sends you to pick up the loot, instead of going you can rat on them to legate Rikke. The Imperial soldiers wil then do the majority of your fighting for you. This option closes once you've chosen a side.

Well i'm about to give up on this game, I've been sided with the stormcloak for 2 hours now and I still can't buy that stupid plot of land in Falkreath.

I wasn't sided on anyone and I couldn't either. I was Thane and everything, why did this bug had to happen... I have to restart 2 hours+ of gameplay now.

Ah yes, the plot of land in Falkreath. I could only buy it when Siddgeir was jarl and I wasn't thane yet. maybe that's your problem, considering you joined Stormcloaks.

i JUST UNLOCKED THE PLOT OF LAND AFTER 6 HOURS OF DOING RANDOM QUESTS!

Now I've gotta restart everything because I have do quests before I join a side, screw my life...

Either way, is there a list of quest or things I should do before?

It took me 6 hours before somebody finally lets me buy it, it's for an achievement.

It's a nice place to live in.

I'm still unsure of what to do, can I get all the achievements in this playthrough now or did I ruin it by siding with the Stormcloaks already?

You can still get all, just be VERY careful while getting Oblivion Walker, especially during Hircines quest. (Not related in any way to what side you choose, same with all daedric quests, just sometimes Hircine's artifact doesn't seem to count at times.)

Yeah I did the right thing with Barbas. I don't know about the others.

Thanks for the warning.

We're all about that plot.

Well, I might be Captain Obvious here, but if you have the civil war finished before the main quest, you will miss out on the Season Unending mission, which is where you go to High Hrothgar and have both sides meet to discuss a peace treaty in order to defeat Alduin. There was some interesting dialogue that I heard during that mission, and i think it might be worth it to complete that before starting the civil war quest line. One of the other things that happens after the Civil war is finished is that a lot of npcs will change their dialogue towards you... I can't go to Windhelm anymore without wanting to clear out the Palace of Kings, but since the residents therein are marked as essential, i can't actually kill them. Oh well.
