Where can I find/mine gold ore or ingots?
I don't mind stealing it if I have to.

How does that get me gold ingots if it's an ebony mine?

For gold; there's Kolskeggr Mine near Markarth (you get a quest to clear the place of Forsworn from the mine just down the road from Markarth)

If you're willing to take the extra time for it (and wouldn't mind some Alteration experience) head for Halted Stream Camp north of Whiterun. It's a bandit-held iron mine, but they've got a pretty good scam going - they have a spell (which you can find a tome of inside the mine) that lets them transmute iron ore into silver ore and silver ore into gold ore (specifying ore because it won't work on ingots). You can get a lot of Iron out of there and transmute it all into silver or gold with the very spell they were using.

Is this Level specific or after so-and-so analyzes the Ore? Their is usually mid-grade ore when I do that quest.
You could use the console to add gold to your inventory, but it if you're playing the game full out no cheats, Mehrunes Dagon's shrine has gold ingots inside (quite a few) and respawns every few in-game days.

Ebony too. And dremora you can farm daedra hearts from if you're wanting to make Daedric weapons and/or armour.

Kolskeggr Mine sounds good, since I usually go to Markarth hold for silver ore anyway

you have to be at least level 16 to 20 for ebony to apper lik armor weapons etc so yes the ore is leveld

I use the Kolskeggr Mine meself. 60+ gold ore each run=profit.

If you're after smithing experience, ebony is certainly worthwhile. You can make bows out of it which give good gains and don't require other materials. That's putting aside its uses in improving daedric weapons (which are generally the best in the game, even better than the dragon stuff AFAIK).

Come to think of it, there were no golden saints in skyrim at all. Kinda lame really.

There is a lot of Gold Ore in a mine near the lovers stone. But you will have to kill some Falmer for it.
