Shield of solitude or spellbreaker?
I have level 100 smithing and 80+ heavy armor with some perks, so hitting the armor cap is not a problem. My blocking is also really strong, and melee enemies are easy for me, but it's usually mages that are annoying.

Should I use the shield of solitude for the passive magic resistance or spellbreaker for the ward effect? How good is spellbreaker's ward effect?

It annoying when ward get broken by more powerfull spells or you didn't wait long enough to fully activate it which lead you to constant stuns. I think Spellbreaker is very good for early levels, but for more higher level character I would recommend shield of solitude to avoid stuns.

Honestly either will do. Shield of Solitude has a fairly good defense rating, and it's magic resist is good. Shield breaker has an even better armor rating and it's ward is the same as Steadfast Ward. Steadfast Ward is realistically the highest ranking ward that you need in the game. Unless you are using Requiem that is. It's very rare to come across mages that know any expert level spells. So it's really a personal preference thing. I prefer to use Spellbreaker. But Shield of Solitude is a very nice piece of armor. Use what you feel comfortable with.

When you increase difficulty the damage from spells are also increased ( I think), making stadfast ward less and less usefull and you will get stun every time

IMO, you're far better off with constant magic resistance than with a ward generator. Like increasing your armor rating, equipping the shield of solitude also increases your magic resistance for as long as you're "wearing" it. If you go to Riften, Temple of Mara, and do the book of love quest, you'll get another 15% constant magic resistance on top of it. A little creative enchanting and you'll essentially brush off mages as no more than annoyance.
