They aren't actually missing; the files for the default texstures and meshes are in the game already (inside Meshes.bsa and Textures.bsa I believe); the only reason there would be textures or .nifs (that I know of) in those folders is because they were added by mods. You see, when you install a mod that makes female hands or heads different, that mod likely puts those .nif and texture files in their respective spots inside the Data folder. Then, when Skyrim runs, it checks to see if there are any files inside those folders, and if there are and they're something Skyrim already has (ie, the default .nifs for female hands), it basically says "Okay, I'll use these ones here from this folder instead of the default ones I was about to use", and then it does just that.
That's my understanding of it, anyway.

the thing is i was told that to have my follower completely stand alone i should have the head mesh in the folder so when people for instance decide they want a differant body they won't over ride your head and body..I have found withmy female if someone installs a body and i don't include the head mesh in the body folder people will get a gap between the neck and torso even if I set the textures on the "preset" head"

So I use SAM instead. You have armour that is made for SAM to.
You can use that whit the other mod I did link to.
Nioweride do I suggest you install if you want mods that do other things.
ECE do I not use, I avoid any mods that clearly says that it need that but there are mods that works if you dont want to install it.

You can easy config other males in SAM. And the shape of them, not the face but the body.
If one mod wants to have SOS then you often can replace it whit SAM, since it is the same modder that have done some importent parts of those 2 mods.
But it is like you say, it lack support in RaceMenu. I dont think it is needed since you have all that things in SAM already.
And it affects all NPC and you can tell it that NPC should have underwear.
I liked the SOS mod but yea ..I really wish i had talent in making textures because there simply is not enough male stuff for the game..I think because so many are so focused on playing a female..The Love for the men is lacking ..it's a shame us Women getting all the attention ..I think it is time for the men to be getting it XD

But you should be in one safe place and in one small cell but you need to uninstall the other body first.
You should perhaps read some first before you change.
