Warzones - previously unstable, but Ive been hearing good things about the newest version. If it is now stable, it would be a great mod but can be INCREDIBLY computer intensive, so much so I'm not even going to try it because I know my rig couldn't handle it with the other stuff I like to run.
Civil War Overhaul - Revamps the civil war so that you can actually lose it, there are now battles in the other holds, the armies are more diverse (tame giants, wolves, mages etc) which can make it very hard, oh, and dragons like to come and crash the party XD Incredibly challenging and a little intensive but really not too bad.
Immersive Patrols - Great mod, I run it as apart of my core set up. Just adds in patrols around the road that will attack you or others if they run into something or someone they don't like. Also adds in some battle along the road or in the wilderness between the two sides of the civil war that you can participate in or not if you want.
You can technically use all three together, and I personally run Immersive patrols and CWO in my current set up along with a lot of other mods fine.
Keep you head down, once you have picked the side., or prepare for battle on the road. Spawned NPCs are not always easy to notice, before they are already on to you. My legioner just avoided a sabre cat, just to end up face to face with a Stormcloak patrol.
Its also worth noting that CWO MUST be started on a new game, and CANNOT be removed from a game in progress without corrupting the save file permanently.
