i want to increase / remove the level cap on dead thrall

If all you want to change is a variable, you might want to look at tes5edit to do it first and see if thats a better option
Not only does it make it easier to navigate to the direct thing you want to edit, but you arent likely to end up with errors because of the program, while you occasionally do with the CK, and it makes it easier to make a new esp. (You should always edit a custom esp, and not one of the main/offical skyrim files)
Id have a look and tell you what variable it is but Im on the wrong computer and dont have access to it right now

Not got access to CK right now but I'm pretty sure they keep their level cap, undead dog dies easily but undead Ulfric is a powerful thrall...

unless you're talking about lowering the conjuration level? In which case lower the cost iirc
