Patches fix a huge bunch of problems, starting from slight gltiches, potentially game breaking AI bugs and stuck polling loops causing CTDs.
Bugs in Skyrim are problematic, because they are not always persistent. You may end up playing the game wihtout bugs that other people mention, or you may end up striking direclty in to problem that becomes persistent.
I strongly recommend installing Unofficial Skyrim Patch + DLC patches (if any). Those are just 4 files (5, if you are using texture pack). Skyrim can run 256 ESM and ESP files in the load order, so you will have around 246 slots to mod your game.
If that isn't enough for someone, then they haven't paid any attentiont to Nazenn's guides.
