But from googling like you did, defeating Miraak finishes the "Dragonborn" (DLC) quest not the main "Alduin" quest.
And I would say from all I have read on google, a sneak type character as it sounds you have would need to be at least 10+ levels higher to stand a chance.
I would recommend to let him keep the damn souls and complete the main quest and civil war quest.
As for how hard the DLC is, there's a generic enemy you'll run into ALL THE TIME, which has stats comparable to giants, and they often attack you in swarms (some dungeons even use them as generic enemies). Oh, and they tend to ambush you out in the wilderness. So you need to make sure you can easily handle giants in an actual fight before you even consider going to the island. Though if you've already started the quest, and have had Miraak steal three souls from you, I would guess you've already met the enemies I'm talking about.
If you want dragon souls btw, just go back to the mainland. I don't think Miraak will steal dragon souls from you unless you're on the island. That's what I did when I got this shout that's necessary to finish the questline, but didn't have any dragon souls to unlock it at the time (thanks to Miraak, obviously).
Nope, if you do not mean the cultists who are relatively easy to fight with the bow, I have not yet met anything. I have solstheim also not explored much yet, or do you meet them now also in Himmelsrand (sorry do not know the English name, the main island)? xx
I already had the feeling when I climbed the mountain to the Greybeards that I should not be there yet, because I had to find some ways not to be killed constantly by super strong wolves and trolls ... should have trusted my instincts xx.
As for the enemies I'm talking about, you should've run into them pretty early on if you've been to Solstheim and have had Miraak steal dragon souls from you. They're called 'ash spawn' (in the English version) if you need a hint as to what I'm talking about.
And yeah, if you can't even handle wolves and trolls in open combat, you really shouldn't be doing the Dragonborn questline.
As for what we're talking about, you seem to have the main questline and the dragonborn questline confused. Those cultists you encountered are what starts the dragonborn questline, which is distinct from the one for the greybeards (which is normally called the main questline). The reason the cultists' quest is called Drabonborn is because it came with the Dragonborn expansion (they weren't originally a part of the game). The main questline came with the original game. As for how you could get them confused, those cultists are programmed to come and start the questline after you've visited the greybeards. I would take a wild guess and say you ran into them at the village at the bottom of the mountain the Greybeards live on? That's where I run into them most often. They can technically appear anywhere, but since they come looking for you as soon as you've talked to the greybeards its almost always in Ivarstead. The only way that can not happen is if you installed the DLC in the middle of your playthrough, which the developers seem to have intended for some reason.
I met the cultists the first time actually in Whiterun after the Greybeards, because I have my house there and as always wanted to teleport there to store my things or to sell and both guys were then killed by the guards xD.
Was super surprising because I didn't know that you could be attacked even inside cities. Had to learn that later the hard way with a dragon that has killed Alvor because he wanted to play the Hero with his fists ~~.
I just loaded a save from yesterday.Have thereby lost a bit of progress. But somehow I don't like the idea of being surprised by even more hitmen than already without ^^''.

For most bigger foes that are not dragons you can make a potion that can help out to even the odds.
Just mix Canis root + imp stool. there are more things that make the same effect but these are easy to find (in the wild and stores) and can be planted in the hearthfire houses.
Thank you for this tipp. I already use a lot of gift- and buff-potions and love to collect things, so this fits perfectly :).
Healing potions I actually use rarely and I've been thinking about selling the stamina potions but always have the feeling I can use them maybe sometimes xD. However, I have at some point really started to sort my potions and everything, because I had partly 100+ weight only of potions I did not want to sell xD ...
but I'm not very far into the game yet either. Have read that potions later 80+ are no longer particularly effective. But I'll see for myself :).
