Lots of mods come down to what your looking for like if you want harder combat, quests, immersion mods, etc. and personnel tastes. For Example some people like to use "iNeed - Food Water and Sleep" where if you don't do those things you can die. I have never even tried this mod however because I don't want to worry about things like that when I'm playing.
The best advice is to think about what you want to get out of Skyrim since you can mod it to be just about anything you can imagine. You can use tons of Immersion mods to make it more realistic, tons of combat overhauls to make as hard as Dark Souls, or just use countless quest mods to never run out of things to do. Once you have an idea of how you want to play, try out one mod at a time that does those things and keep it if you like it.

ultimate combat/deadly combat for a gameplay change! I like ultimate combat with the hardcore setting, but the animatuions sometimes bug out, that might annoy some people and those should go for deadly combat instead.
Highlevel enemies..........adds more different enemies at higher levels, can be quite hard with combat mods.
SkyRe is nice, too, but it is very focused on those talent points and for me that doesnt fit an elder scrolls game.
It is very very specific in your choices. You cant just be a "bow and a bit melee" adventurer with skyre, you have to choose a specific bow type and a very specific weapon type like "scimitars".
And it buufs weapons a bit too much compared to creatures, all creatues will be very harmless with SkyRe.
