I started with the thief stone till I got sneak leveled up nicely then switched to Warrior to develop my dagger (and for big fights, shield) skills, until I eventually made my way over to Markarth for the Lover's stone for a 15% boost to everything. Granted I spend most of my time adventuring and not running back home to renew the Well Rested or Lover's Comfort. You should be "Making hay while the sun shines." or better yet, "Looting gold while the Draugr sleeps." Your better half will thank you for it later.
As far as your pickpocket skills, if you joined the Brotherhood, they have a torture room. That is a good place to practice most skills. Just be sure not to kill them.
As far as what you can pickpocket, (there are videos on YouTube) if you want to perk for it, you can steal the weapons or even the shirt off of someone's back. And like you say, there are some things people should notice right away. Especially if its breezy and daylight.
As far as the most unusual thing I pickpocketed, was the dress off of the missus. I wanted to change the dress she wore, so I took the old one and deposited the new one. But unfortunately the next day I found out she had a spare hidden somewhere. So much for cosplay Tavern night.
With pickpocketing you can pickpocket jewels and stuff, nothing that awesome unless you get the perk that lets you take clothes and weapons that they have on.

Granted the Invisibility makes life much easier. Think about that the next time you Lover's Comfort. I rarely use invisibility in the wild since Lydia in platemail is sworn to attract all the attention and I get to backstab stuff as they run by. Maxed sneak with perks is handy.
While I have managed to kill 2 or 4 at a time with backstab before the rest of the room catches on, I've yet to use Frenzy to see if I can do the whole room while they are otherwise occupied.
For the stone, I went with Lord's for the most time. The extra armor is kinda crap, but the magic resist helps a bit.
Also, if you play a Khajiit assassin, the Dark Brotherhood has some GREAT dialogue geared towards the cats. In particular the quest where you infiltrate <redacted> to feed the <redacted>. You know what I'm talking about. =P
